OKDONGSIK

Translated as “a single-item restaurant” and “a restaurant where everyone dines together,” OKDONGSIK started in Seoul, Korea, in 2017, offering the Korean comfort food Dweji Gomtang. Since 2018, OKDONGSIK Seoul has been listed in the MICHELIN Guide Bib Gourmand. With its growing popularity, OKDONGSIK expanded globally, opening its first location in NYC in 2022 after a 4-month of successful pop-up. Recognized as one of the top 8 Best Dishes in NYC 2023 by Pete Wells from The New York Times, OKDONGSIK continues to make its mark in the culinary scene.

Dweji Gomtang

Gomtang is a traditional Korean soup, typically slow-cooked with meat, bones, and offals. OKDONGSIK’s Dweji Gomtang features a unique signature clean and clear broth achieved by slow-simmering pork shoulders, green onions, radish, onions, garlic, ginger, and peppercorns. The broth is then seasoned only with salt to bring out the delicate pork flavor. The rice served with the gomtang is gently bathed in hot broth multiple times and topped with thinly sliced pork just before serving, then the gomtang broth is poured over the heated rice ensuring the optimal temperature between 75 and 80°C (167 - 176 °F).

After completing a comprehensive four-year culinary arts program at Kyung Hee University, Chef Ok Dongsik developed his culinary skills through diverse experiences, including working in the inflight catering division of an airline, the Korean embassy in Côte d’Ivoire , and as a head chef at a prestigious hotel in Korea. Chef Ok Dongsik’s culinary philosophy revolves around bringing out the finest flavors of ingredients, emphasizing the importance of freshness of ingredients over price. His philosophy led him to establish Okdongsik with a singular goal – to prepare the food in the best authentic way. Today, OKDONGSIK specializes in gomtang, Korean comfort food that accentuates delicate flavors with the simplest ingredients.
